My passion for nutrition began in college, when I first discovered how powerful food can be in restoring balance and energy from the inside out.
But life took me through unexpected seasons. I became a mom, then a widow raising three children on my own, but my passion for nutrition never left. With my children’s blessing, I returned to school, earned my Master’s in Nutritional Science, and became a Registered Dietitian with advanced training in Functional Nutrition and Nutrigenomics — the science of how food and genes interact.
Working as a Clinical Dietitian taught me how resilient the human body can be. But it also showed me that true healing begins long before a hospital stay. My heart was drawn to helping people before they reached that point of crisis.
Balancing hospital work with a growing private practice eventually left me exhausted and feeling the very imbalance I was helping others overcome. That was my wake-up call. So, I stepped out in faith, left the hospital, and devoted myself fully to Rethink Your Meal — work that reflects my heart, my story, and my purpose.
It stopped being just what I did. It became who I am.

Catherine combines her Master's Degree in Nutritional Science with specialized training in Functional Nutrition and Nutrigenomics to create truly individualized health plans. Unlike one-size-fits-all approaches, she examines your unique genetic predispositions and life circumstances to uncover the root causes of your health concerns.
With years of experience helping patients in critical hospital settings and private practice clients reverse conditions naturally, Catherine understands the overwhelming emotions that come with health diagnoses and weight stigma. She provides compassionate support that focuses on extending your health span—not just your life span–so patients can enjoy their whole life with optimal energy.
Catherine’s philosophy is to make nutrition coaching accessible and affordable for everyone. That’s why she has partnered with major insurance providers through which many of her clients pay very little or $0 out-of-pocket for Medical Nutrition Therapy. She also offers flexible payment plans for out-of-pocket services. She believes it’s never too late for new beginnings and is committed to walking alongside you every step of your wellness journey.
